Poutine only works if the three parts arrive at the same moment, and that is how we build ours: fries out of the fryer, cheese on top, then our own gravy over the whole thing so it melts on contact. Nothing sits and steams. It is one of the most ordered sides at Capital Pizza & Steak House, popular with kids, late-lunch guests and anyone adding one more thing to a pizza order.
The gravy is made in house, which is what separates a real poutine from fries with sauce on them. It has body without being pasty, and enough seasoning to stand up to a full plate of fries. We keep the classic version simple, and if you want it turned into a meal we also serve a Donair Poutine smothered in the same gravy with mozzarella, donair meat and sweet sauce on top.
