Dry ribs are an Alberta appetizer institution, and ours have been on the Capital Pizza & Steak House menu for years. Boneless pork rib pieces are breaded, seasoned and fried to order so they arrive hot and crisp rather than sitting under a lamp. Garlic toast comes alongside. They are the plate to order while the rest of the table is still deciding.
Frying to order is the whole trick. Dry ribs go soft quickly, so ours leave the fryer and go straight to the table with the seasoning still clinging to the crust. Using boneless pork means every piece is edible — no picking around bone — and the cut stays tender under a crisp coating. They are equally good as a shared starter with drinks or as a light main with a side.
Dry ribs are one of our most common additions to a pizza order for takeout across Belle Rive, Mayliewan, Fraser and Matt Berry.
